Growing up I learned the name of this salad to be Kelly Salad. I have no idea who Kelly is, but I sure love her salad!
Ingredients:
- 2 heads of broccoli
- red onion
- 1/2 pound bacon
- 1/2 c. raisins
- 1 c. Mayonnaise
- 2 TBL sugar
- 2 TBL red wine or apple cider vinegar
- optional add-ins like sunflower seeds, grated cheddar cheese, even ham cubes!
Directions:
Wash and cut the broccoli. You want mostly the florets for this salad. Cut into bite sized pieces. Place into a seal-able bowl.
Cut the red onion into small pieces. Depending on how well you like onions, add up to 1/2 c. of red onion to the broccoli along with 1/2 c. raisins.
In a separate bowl, whisk together the mayo, sugar and vinegar. If you like a very sweet salad, add more sugar. Once whisked and combined, pour over the broccoli, onions and raisins. You can also add addtional items like nuts (sunflower seeds are nice!) or shredded cheese…even ham cubes!
Combine well, and chill in the refrigerator for a few hours before serving.
Cook 6-12 pieces of bacon, crispy, and cut into bite sized pieces. Do not add to the salad until ready to serve to prevent sogging of the bacon!
