Recipe: Grilled Potatoes and Onions

Ingredients:

Cleaned potatoes

Fresh Onions (any variety)

Olive Oil

Salt

Pepper

Seasonings/herbs of choice

Directions:

  • Slice your potatoes into 1/4 to 1/2 inch slices depending on your preference. I like to slice my potatoes without peeling them, but you can peel your potatoes if you prefer.
  • Slice your onions, or quarter them into a size you like.
  • Put the potatoes and onions into a large zip top bag and add 1 to 2 TBL of olive oil along with course salt and pepper to taste. You can add any additional herbs or seasonings you like. Seal bag and shake to coat.
  • Grill on the barbecue in a grill basket for 25-40 minutes (depending on size and number of potatoes) or until done to your liking. Turning potatoes occasionally.

Note:

Be careful with fresh herbs. They burn easily and shouldn’t be added until the last few minutes on the grill, or after you remove them from the grill.
