Relishes are prepared from fruits and/or vegetables that are chopped and cooked to desired consistency in a spicy vinegar solution. Sometimes sugar is added if a sweet relish is desired and sometimes hot peppers or other spices are added for a hot relish. Relishes include piccalilli, pepper-onion, chutney, horseradish, and corn relish.
Relish is a great way to use up all those end of the season peppers and onions! I found that lightly pulsing the chopped peppers and onions in a food processor makes for a nicer relish.
Ingredients:
13 C. diced multicolored peppers
6 C. diced onions
3 C. cider vinegar
2 1/2 C. sugar
1 T. salt
2 t. mustard seed
1 t. celery seed
Directions:
Combine all ingredients in a large pot. Bring to a boil, cover and simmer for 20 minutes. Pour into hot, sterilized jars, leaving 1/4 inch headspace. Adjust lids. Process for 15 minutes in a hot water bath.
Yield: 7 pints
